I love baking cupcakes as the variations are many, and the baking time relatively short (around 15 – 20 minutes depending on the recipe), compared with baking a cake. Besides storage is easy too. Most of all, it is very simple to decorate a cup cake, and it could be served as an individual dessert (eg. Sticky Date cupcake with Caramel Syrup).
My children go wild with joy when they discover that I am baking cupcakes, especially the Strawberry Jelly Surprise cupcake which tends to ooze out strawberry jam once you take a bite!. Even simple cupcakes such as Chocolate Chip, Raisin & Nut, and Brownie cupcakes are a great hit with my kids. Although some of the unusual varieties may appear hard to make, they are all quick and easy to turn out. Decorating a cupcake does not take much effort nor do you need a very steady hand when icing – yes, as you would have guessed, I am no maestro at cake decoration! 🙂
